ketchup

This is the most simple and delicious recipe for homemade ketchup. I’ve made it the complicated way, by cooking tomatoes and onions for 3 hrs and blending everything and pushing it through a sieve…but this recipe takes 10 seconds, and tastes just as good!

6 ounce can tomato paste
1/3 cup water, or more (for consistency)
2 Tbsp apple cider vinegar
1/4 tsp dry mustard
1/4 tsp cinnamon
1/4 tsp salt
1 pinch cloves
1 pinch allspice
1 pinch cayenne pepper
1/3 cup honey
Whisk together and, Voila! homemade ketchup! (SCD legal) ;)

mayonnaise

So this recipe is for all you southern mayonnaise lovers out there. I know what you’re thinking, a fitness instructor? addicted to mayo? I know, its made out of egg yolks, but, sorry mayo haters, I LOVE IT!
Since most mayonnaises, like Hellman’s, contain sugar and soybean oil, which are illegal on the SCD diet, I make my own mayonnaise, which I think tastes better than any fresh mayo you’ve ever had. I think the ingredient that makes it so amazing is the grapeseed oil. I’ve tried making it with many other types of oils, but the grapeseed oil takes it to the next level. I usually make a fresh jar every week, bc I use it for making all kinds of aiolis, sauces, dips, salad dressings, and you can top it on just about everything. I like to mix it w my homemade pesto, and bake it on top of white fish. mmm…
ok, so here’s the recipe:
Makes 1 1/2 cups
2 egg yolks
2 Tbs fresh lemon juice
2 Tbs water
1 tsp honey
1 tsp mustard powder
1/2 tsp salt
1/2 tsp white pepper
1 cup grapeseed oil

Fill a small pot a quarter of the way w hot water & bring to a simmer. Place a heatproof bowl onto the pot. Add everything but the oil, and whisk until the mixture thickens, maybe 10 min. Remove from heat and pour into a blender. Add a small amt of the oil to the mixture, and start up the blender. While blending, slowly pour in the oil, just a little bit at a time, until all the oil is blended and the mixture has thickened. Pour into a sealed jar, and refrigerate, it will keep for 4 weeks.
