Olive Bread

This stuff is amazing. I know, its not SCD legal, or gluten free,  but I just had to post it because of its pure deliciousness. Its one of my friends favorites, so I had to make it as soon as I arrived in Berlin. There are a couple of different ways to go about making it, like making your own fresh dough, or buying some from your local pizza guy, either way, you’re gonna LOVE IT!
So making your own dough is pretty easy, it just takes some time and love. Here’s a link from Giada, with a video http://www.foodnetwork.com/recipes/giada-de-laurentiis/pizza-dough-recipe/index.html  But its pretty easy to just hit up your local pizza guy for some fresh dough, which is usually just as good. But if you really have to, I guess its ok to buy a packaged store bought pizza dough from your grocery store, if thats all you can find. So roll it out to the desired size you want, and you will need a top layer the same size.
Depending on the size of your dough, you will need enough green and kalamata olives to pretty much cover the first layer, like you see in the picture.
It makes life easier if you can find them pitted, and without the pimento stuffed in the green olives. But if you get the pimento stuffed, just discard them or save them for making some pimento cheese spread. yum.
Cut the olives in half and spread all over the first layer.
Sprinkle with herbs de provence, or dried oregano, and freshly ground black pepper, and drizzle a little bit of olive oil all over.
Cover with the second layer of dough, and cut a few slits in the top so you don’t get huge air bubbles forming in the dough. (not pretty)
Season the top layer w a drizzle of olive oil, and herbs de provence or oregano, and freshly ground black pepper, maybe a tiny bit of kosher salt. Bake at 325F for about 20 minutes, or until it has a lightly browned color all over. Allow to cool, and slice. Its even better dipped into a nice olive oil mixture. Make a mix with 1/2 cup olive oil and 1 Tbsp finely minced and mashed kalamata olives, garlic and basil. YUM!
